Cowboy Quinoa

 

   Serving Size:
One serving is 1 oz grain, 1/4 cup vegetable and 1.5 oz meat/meat alternate for a 3-5 year old for lunch/supper.

Ingredients:

3/4 cup quinoa
1 1/2 water
1 Tbsp. cider vinegar
2 Tbsp. olive oil
2 (15 oz.) cans rinsed black beans
1 cup frozen corn
1/2 cup halved cherry tomato(es)
1/4 cup sliced onion

Directions:
Combine water and quinoa in small pan and bring to boil. Cover and let simmer, about 12 to 15 minutes (until quinoa is tender). Whisk together oil and vinegar. Pour over quinoa. Add beans, corn, tomatoes and onion. Stir.
