Summertime Rice

 







   Serving Size:
1 1/3 cup provide 1 oz grain, 1.5 oz meat/ meat alternate and 1/2 cup vegetable for a 3-5 year old at lunch/supper.

 

   Yield:
6 cups

 


 

Ingredients:

1 cup brown rice
3/4 cup chopped tomato(es)
3 cups chopped spinach
3/4 cup chopped carrot(s)
3/4 cup chopped broccoli
2 15 oz cans (3 cups) rinsed and drained, chickpeas/garbanzo beans
2 Tbsp olive oil
2 Tbsp apple cider vinegar
2 Tbsp grated parmesan cheese

Directions:
Cook Rice per package instructions. Allow rice to cool. Mix vegetables together in large bowl except the beans. In a separate bowl, mix together the cooled rice and chickpeas. Add the vegetables to the rice and bean mixture. In a small bowl, mix together olive oil and vinegar and pour over rice and chickpeas. Top with parmesan cheese. Mix.
